Holiday Recipe: Tzimmes

1 onion
3-4 lbs boneless silverside beef
2 tablespoons vegetable oil
4 large carrots

1 lemon
4 medium sweet potatoes
3 large new potatoes
16 dried prunes
Boiling water
3 tablespoons juice from orange juice
1-1 1/2 tablespoons brown sugar
1-1 1/2 tablespoons flour
Salt to taste
Fresh ground pepper

INSTRUCTIONS:
Preheat the oven to 350 degrees

Slice the onion and brown it and the meat in the oil in a frying pan. Place the meat and onion in a large roasting pan with cover.

Wash the carrots, peeling them and cut into thick coins. Cut the lemon into thin slices. Peel potatoes and cut into chunks. Place the carrots, prunes, lemon, sweet potatoes and white potatoes around the meat in the roasting pan.

Combine 16 fl oz of boiling water aside. Mix together the brown sugar and flour in equal amounts, amount of sweetness. Add just enough plain hot water to the sugar flour mixture to make a watery paste then add the orange juice mixture. Stir well and pour over the meat, fruit and vegetables. Add more boiling water to the roasting pan to cover all the ingredients. Cover and bake for 4 hours. Uncover and bake for 30 more minutes. The meat should be well browned.
